Dragon Ball, the series, is full of humor, fighting, and some Japanese pervishness that makes a bit cheeky as well. It also involves some spine tingling enemies that go for death, or the possibility of it. As a whole, rather than just the split seasons, Dragon Ball is really good to watch.
Dragon Ball Z the series varies from season to season, and saga to saga. The saiyan saga at the beginning gives you some story, then some decent fighting between characters, different fighters, ups and downs.
The Namek saga includes a whole bunch of new enemies, things that have to be accomplished, a lot of new abilities from heroes and enemies, characters reaching new levels as fighters etc.
After the Namek saga it starts up the Cell saga, which only makes sense if you have knowledge of Dragon Ball. Basically a Dr has gathered all the info on fighters that pestered him, and created a super being to fight them. This saga is a lot less comedy, the fighting is alright, but it's a lot of one sided fighting. Like one side always is way stronger than the other, rather than there being a lot of evenly matched fighting. You did get introduced to Hercule/Mr. Satan in the Japanese related series. He's one of the best characters for his comedic ways. The Cell saga is about everyone getting to the next level of power. I'm pretty sure the android/cell saga is one with the most longest scenes and bridges that might take multiple episodes to get though, aside from the buu saga.
After the Cell saga it gets a bit choppy. The Buu saga is next and it's interesting, but every time it moves along, things happen that make you go "Wait, what?" It's not a bad saga, just not that great.
Then if you watch Dragon Ball GT, just throw logic out the window and try to enjoy what you get.
