The thing with bedwetting, is that it's kind of hard to ignore. And since it'll basically start after they use Eve's powers there's really no way Amanda wouldn't want to address it immediately you know? She hates being seen as a kid, so knowing that Eve's powers have caused her bedwetting, she'd want to undo things as quickly as possible.
In terms of things to do in the rp, I think going in a direction that moves us from hero work to be more focused on Amanda most of the time would be the best idea. I could play other characters that have the caretaker role for Amanda when Eve has to be doing other things.
What I really need to know is what you want specifically for Amanda, as you'll be playing her. I've noticed you seem more inclined towards her being relatively the same age, but with continence problems right? Her having to act more like a little girl to keep suspicion away from her... Though the issue being that we'd probably need a good reason to force her into that sort of situation since I doubt she would care much about random people thinking she should be in school. She could easily just say, homeschool, or online school.

Hmm well it could be more than her continence, and it could be not all at once. Like first just some bed wetting, then some small accidents, and so forth as her continence goes down potentially without them realizing what is happening for a while. Could also be other things like her motor skills and the like. Especially if it takes them a while to figure out what's happening and Amanda refuses to see the problem, making others question how much her judgement can trusted.
It is a bit tricky on the question of what is happening outside of the problem though. Like I wouldn't have an issue with rping hero work shenanigans except that's the one place where she wouldn't have any problems since she would be transformed. I suppose one idea would be to look more at what's going on in Eve's life and how having Amanda in it and having problems would effect. Like does she decide to start taking classes on her downtime and if so how does she explain the random kid living with her if someone comes over? Or are they just taking being Guardian's as a fulltime gig and we have them hanging out on their downtime?
Thinking about it I suppose if they are living off base together something as simple as some nosey neighbors could lead to some amusing scenes. "Hey we noticed Amanda seems to be home a lot during school hours..." "Is there a reason the little girl living with you never goes out to spend time with the kids in the neighborhood..." Que poorly thought out plans by young people to allay suspicion that just makes things worse in the long run.

Yeah, that's what I meant by Eve's powers making things worse because it's a curse. My primary issue with the idea of her just becoming incontinent and maybe a bit younger, is that I'm not sure where to take that idea in terms of content down the line. Unless you'd like to rp them doing hero work.

Hmm you know I'm suddenly reminded of the bit where Robot has the point out to the doctors that her issue is magic, not science. What if attempting to use Eve's powers to fix her causes problems purely because it's trying to solve a magic with science without someone there to point out how that can go wrong?
The idea of having like her continence get younger than she is would be kind of amusing. Maybe Eve tries to mess with her powers but then when they test it she instead loses a couple years all at once, then they think they fixed that and she doesn't seem to be getting younger at first except they start to realize that while she's not regressing physically other parts of her are like her continence.

So here are a few idea examples of mine.
Firstly I want to touch on the spy angle. So, the au for this would be something along the lines of Monster Girl being a part of guardians, once the figure out her power grows stronger the younger she is, she is approached by Cecil to purposely become younger, wherein she will only ever have to use her powers for big threats, otherwise she is to maintain her young form for the purpose of being a spy, and is assigned April basically as her 'nanny' but it's more that Amanda can basically have whatever she wants as a baby. Additionally this idea could also work with Eve being her assigned partner.
Eve wise, the only real thing keeping her from being part of the guardians was Rex having cheated on her, so we could easily say they just didn't have a relationship, I also just think we wouldn't need to bother with them much anyway.
Them housing together is pretty easy, and from there the two of them would probably talk about their powers. Learning that Eve can just sorta, rebuild things, would bring us to our main outcomes. Of which I can see, they alter Amanda's powers so that she can put more age into it to temporarily become much younger for a short time.
Things go wrong and they make her much younger in the first place, or it messes with her body in such a way that certain parts of her 'ie her continence' is younger than other parts of her body.
Or I did think of an idea where Eve completely rebuilds Amanda's body, basically by making Amanda a clone of her, giving her Eve's powers, but the result ended up making Amanda a toddler/baby, mostly to bank on something Eve said about using her own powers in excess makes her have to use the bathroom more, which would be fun on a toddler for obvious reasons.

Yeah Eve has a lot of fun potential, plus just a fun character. Not to mention like you said her power is perfect for doing things that otherwise wouldn't make much sense without either magic or serious suspension of disbelief.
So I suppose the easiest solution would be to throw the two together in some sort of cohabitation and then start Amanda having problems. Could be AU with Eve joining the Guardians instead of Rex/Kate and the two get assigned to room together when moving into HQ, or perhaps Amanda's having some kind of issue with her current housing situation (is tired of having to live at home because no one will rent to a kid, or maybe she had a place but people are getting suspicious of never seeing an adult around) so the idea of sharing a place gets floated.

Amber and Debbie are pretty much a no go, I don't see any particular reason to go with them. April is a tutor and also has less reason to be involved, however she was hired through Cecil, so that could factor into the whole toddler spy angle.
I'm also not a huge fan of Kate either, but I could see some interesting scenarios with her. Similarly I don't have much love for Rae but could see some interesting scenarios.
Eve is my biggest draw, and with her powers we could justify.a lot of scenarios.
Personally I would steer us towards ideas where needing diapers due to age or side effects is the primary reason.

Yeah I think in the short comic on her backstory it mentions she had tried a few times to stop using her powers but things just always seemed to come up that she felt she had to get involved in.
As for girls the series doesn't have too many to choose from. Going with just those we actually see on screen and not ones only mentioned (like I think she says something at one point about her Mom dropping her off) we've got Eve, Debbie, Shrinking Rae, Dupli-Kate, Amber, and April. Don't think I forgot anyone but I might have.
Dupli-Kate I'm not a huge fan of but feels like the most likely to get involved in something petty. Don't ask me why she just often gives me those vibes.
Rae is nearly a blank slate which is good for doing whatever you want with but doesn't give you have to work from the ground up. That said as a fellow Guardian and seemingly to be at least in her mid twenties if not older she would work pretty well for a variety of possible scenarios.
Eve is of course fun both because she's a cool character we actually know more about and her power could lead to some whacky things. That said we don't see her do much with MG but that's where some AU can come in.
Debbie is tricky because there's not too much obvious reason for her to interact with MG. Frankly the only things that come to mind is either a favor for or from Mark like Amanda staying for a while as extra security or something while he's off planet.
April (the nanny Debbie hires) again doesn't have much reason to be connected to Amanda but sine there's a connection to Cecil I suppose it's possible that she could get called in if say something was going oddly with her regression and they were trying to judge the mental effects, comparing her behavior to her apparent age and the like, or any other reason while the folks in charge might want to make Amanda interact with someone who is trained to deal with children.
Lastly Amber probably would be the one with the least reason to have any connection without either being very AU or something fairly contrived. Honestly the only thing that comes directly to mind is something like someone hiring her as a babysitter to show up at Amanda's house one night as a prank or something.

I think she has a secret identity in a way. I have to imagine it's a combination of no one thinking she could be Monster Girl, and intentionally keeping quiet about it. After all she has issues with people taking her seriously, if her identity was public I imagine that wouldn't be that big of a deal. Also I don't think she really wants notoriety for being the hero either, it's just a job to her, after all, she was just a stereotypical spoiled rich girl, I imagine her skillset is rather shallow outside of her hero work. While she might not risk just transforming directly in public, her being in a forced situation wouldn't be public all the time.
The 'stops being a hero' angle, at least on her own power, seems unlikely, as she seems to enjoy fighting, or at least has no interest in a different line of work. I do imagine that she can't just never transform again, after all it is a curse, I assume if she ever gets back to her normal age it'll become involuntary, and when she's older, the form less useful.
I think we should figure out who we want her to be with specifically since that'll shape the way we take this far more. So what girls from the series do you think would work?

Yeah I've had my account a long while but I haven't posted much.
Yeah the struggle of not just solving whatever problem by going into monster form is tricky. Like it makes sense not to in lower stakes situations like where they aren't getting let into the movies, she's gotta ask herself if it's worth losing more age not to mention other consequences of random Monster Girl appearance, but if the situation is bad enough then she would probably just use it.
One kind of additional potential reason for her not to I guess might be secret identity stuff. I mean in the comics/cartoon she doesn't seem to try to hard to conceal that but we could make that an AU element I suppose. Have her wear a costume that includes a mask any tine she's going out as a hero but not transformed so she doesn't want to transform when out of costume.
I could also kind of see maybe one of those classic "hero gives up being a hero for a bit" or "heroes powers don't work for a bit" type scenarios. I imagine if she straight up could not become a monster for a period of time due to mishap or for her own good she might get herself into some tough spots having up till then being used to having that card up her sleeve that if all else fails she could just transform only to suddenly not have that for a bit.
Hmm could someone either trying to science or magic her a cure or something like what you mentioned, an ability for her to freely control her age so she could get younger when she needs the monster to be stronger, but then have the experiment go wrong or have some growing pains. Pun not intended.
Undercover/spy stuff would also work well. If she's just finally managed to get invited to the super villain's daughter's sleepover and she finds out that they have a rule about everyone wearing goodnights is it worth her cover to refuse?
