Well this concept could really make Katara have plenty of right to care for Toph as a child in many ways and even cause embarrassment and worse indirectly from the concept .. which the ideas concept is born from the fact in the comics and other extra reading material its kinda a thing Katara is outside of the Avatar at times (Prior to the Legend of Korra screwing over the past knowledge cycle transfer atleast) and afew long gone water Benders she is the greatest water bender healer there is.. Then combine that with the spirit water she was given at a point, which enhances water bending healing when used and how Blindness even from birth can be caused by a form of cataracts … Well Katara could possible break down what is causing Tophs blindness do to those factors.. Thus she needs to get used to a new to her sense and learn things even most toddlers know... Maybe even learn how to do varies simple/basic tasks again as regular sight factored in now really is putting a whole new spin on things and thus she needs to learn how to do things the normal way .. Add to that possible sensory overload like a infant and toddler can get from too much stimuli could happen now way way easier to Toph
