I'd prefer if you kept control of Celestia, and the Twilight idea sounds perfect. Perhaps to make ends meat she signs up for a babysitting job in Canterlot, only to find out she's the one being the baby?
Ah, how about some general coldness/formality, then Dash gets into a fight when one of those ponies from before makes fun of her, punching him in the face and despite him getting a few hits in she pretty much owns him until they get interrupted. Spitfire has her come to her office, Dash treats her like she's just somepony in charge, all cold and stiff, which might be when Spitfire realises something is wrong. Of course, from the fact Dash started the fight and beat the other guy up she needs to be punished, and so they use the 'dress/act like a foal for Spitfire' idea on Dash as well.
Hmm, just thinking, Spitfire said she'd always wanted a foal before and Dash thinks now she's chosen Lightning Dust for that, which is making her feel oddly jealous. And right off Spitfire is leaving her in her wet diaper to do Lightning Dust, so she'll take it as Spitfire going with Lightning Dust over her. Dash can start being formal and not friendly or warm with Spitfire, and maybe some acting out, because she's feeling jilted and such.
It'll be all just "Yes ma'am" / "No ma'am" and nothing all that sort of thing. Cold, formal, detached.
Sounds good to me. Shall she breakdown when they drag her into private or out in the open? I imagine at some point they'll need to go to the office or somewhere more private to sort things out.
