Kaze no Stigma, Fate Stay the Night, Mai-Hime, and X our all favorites of mine, and none of them are paticularly gory.

There's also Death Note, and Hell Girl, which aren't Gory, but both can be dark and scary, less action stories and more of an emotional/intelectual dramas.

If you like Robots there Tengen Toppen Guren Lagen for epicness, RahXephon for weirdness (in a cool way) and Code Geass (for a sort of chess match appeal)

Darker than Black is good, although it might be borderline on the gore (I've seen way worse, but there are still some bad parts) Same with Fullmetal Alchemist

Sky girls was alright. Black Cat and Trigun are both popular (I thought they were okay)

I must highly recommend:

Tengen Toppa Gurren Lagann for epic mech action as well as changing your life itself (no I am not exaggerating it's that great)

.hack//SIGN has no gore at all and some of the greatest character development I have ever seen in an anime ever. That said it is a bit slow moving so it's not for all tastes.

I have others as well but many of my favorites don't hold back on the violence so they may not be something you'd want to see.
